In this post I am going to share my recipe of crispy and tangy Samosa's

For samosa dough:
- All purpose flour/maida -2 1/2 cup
- Ghee/clarified butter - 3 tbsp
- Cooking oil -3 tbsp
- Ajwain /Carom seeds -1/4 tsp
- Salt - 1/2 tsp
Process:
- Take maida/ all purpose flour in a bowl
- Add ghee, oil,ajwain and salt to maida and mix well
- Add water to make dough, dough should not be very hard or soft
- Cover the dough with wet cloth and keep it aside
For samosa filling:
- Ghee/cooking oil - 2 tbsp
- Green peas - 1/2 cup
- 5 boiled and mashed potatoes
- Cumin/jeera -1/2 tsp
- 4 green chillies chopped
- Ginger paste -1 tsp
- Coriander powder -1 tsp
- Turmeric powder -1/2 tsp
- Aamchur powder(according to taste) -1 tsp
- Red chilli powder(according to taste) -1/2 tsp
- Salt(according to taste)
- Roasted cumin powder - 1 tsp
- Garam masala powder -1 /2 tsp
Process:
- Heat ghee / oil in a pan
- Add cumin and stir
- Add green chillies and ginger paste and stir , add coriander powder, turmeric powder, aamchur powder, red chilli powder and stir
- Add green peas and salt , cook for 1 min
- Add boiled/ mashed potatoes and mix well , add roasted cumin powder and garam masala powder and mix well and cook for 2 min
- Turn off the heat, the filling is ready
Process for assembling samosas:
- Divide the dough to make equal size balls
- Roll the dough as shown in to circle of medium thickness
- Cut each circle in half
- Brush the edges with little water , fold it to make a cone shape and squeeze the edges to make a tight seal
- Place filling inside each cone
- Brush the inside edge of the cone with water and press the edges to make tight seal and repeat this process for each one and place all samosa in a plate until ready to fry
- Heat oil in a pan/kadai on medium heat, and put samosa one by one in oil.
- Flip samosa occasionally, when one side starts turning brown, flip it to get even colour on both sides
- Take it out on a paper towel to soak excess oil, and its ready to serve
