Mix veg curry

Mix veg curry can be made when you are not sure which vegetable to pick. So just pick a few and a make a nice delicious mix veg curry.







Serves:4

Ingredients:
  • Cauliflower florets-2 cup
  • Beans chopped-1 cup
  • Capsicum chopped-1 cup
  • Peas-1/2 cup
  • Cooking oil -2 tbsp
  • Paneer cubes-1/2 cup
  • 1/2 red onion chopped
  • 1/2 tomato chopped
  • 2 to 3 green chillies chopped
  • 1 tbsp ginger grated
  • Bayleaf/tezpatta-2
  • Whole Cumin-1/4tsp
  • Cardamom-2
  • Cloves-4
  • Cinnamon stick -1
  • 1 tsp cumin(jeera) powder
  • 1 1/2 tsp coriander(dhania) powder
  • 1/2 tsp red chilli powder(according to taste)
  • 1/2 tsp turmeric powder
  • Salt(according to taste)
  • 1/2 tsp garam masala powder

Process:
  • Wash and cut cauliflower, beans and capsicum and prepare whole garam masala as shown in the pictures below
 





  • Prepare other ingredients chopped onion, grated ginger, chopped green chillies,tomatoes and paneer cubes as shown in the picture below
 


  • Heat oil in the pan
 

  • Add bayleaf, cumin(jeera) and crush whole garam masala and stir
 


  • Add onions and stir till they are golden
 


  • Add ginger and green chillies and stir
 


  • Add tomatoes and stir on medium heat
 


  • Add turmeric powder, salt, red chilli powder, cumin powder, coriander powder and mix well on lower medium heat
 






  • Now add cauliflower florets, capsicum, beans, peas and stir on medium heat
 






  • Cover it and let it cook from 7 to 10 min
 

  • Open it and stir properly , vegetables will release some water 
 

  • Again cover it and let it cook for 5 to 7 min
 

  • Open it and stir for some more time till vegetables get cooked properly
 

  • Add garam masala powder and paneer cubes and mix well and cook for 2 to 3 min
 



  • Its done and ready to serve
