Serves :2
Ingredients:
- Okra(bhindi):250 gm
- Cooking oil:2 tbsp
- 2 Green chillies chopped(to taste)
- Half medium size onion chopped
- 1/4 tsp garlic chopped
- 1/4 tsp ginger chopped
- Cilantro chopped(for garnishing)
- A pinch of asafetida(hing)
- 1/4 tsp cumin( jeera)
- 1 1/2 tsp coriander powder
- 1 tsp cumin powder
- 1/4 tsp red chilli powder
- 1 tsp chaat masala powder
- 1 tsp amchur powder
Process:
- Wash and then wipe okra(bhindi) to complete dry
- Cut okra(bhindi) from both sides as shown in the picture below
- Slit and keep aside
- Prepare other ingredients chopped green chillies , onion , ginger , garlic and cilantro as shown in the picture below
- Take a bowl and add 1 and 1/2 tsp coriander powder
- Add 1 tsp cumin powder
- Add 1/4 tsp turmeric powder
- Add red chili powder( to taste)
- Add a pinch of asafetida(hing) and salt( to taste)
- Add 1 tsp chaat masala powder, 1/2tsp amchur powder , if want more tangy taste , add some more amchur powder
- Mix well all dry masalas
- Fill the okra( bhindi) with this dry masalas one by one and keep it aside for 5 to 10 min
- Heat the pan and put oil
- Add cumin and stir
- Add green chillies and garlic and stir well
- When garlic turns light brown , add ginger and stir well
- Add stuffed okra( bhindi) in the pan and stir well
- Let it cook for 5 min on medium heat , don't cover it
- Add onions and stir
- Now cover it and let it cook for 7 to 10 min, stir occasionally
- Cook for 2 to 3 min without covering the pan and stir occasionally
- Add cilantro and mix well and turn off the stove, then take it out from stove otherwise it can get overcooked or burn
- Serve hot with chapati/rice
