Bengali begun bhaja/simple eggplant fry

Begun bhaja is an authentic bengali cuisine, in this dish eggplant is marinated and fried and it tastes heavenly. Make sure the eggplant is of good quality for best outcome.



Serves :- 2

Ingredients :-

  • Eggplant-1
  • Mustard oil  for shallow fry
  • 1 tsp turmeric powder
  • 1/4 tsp red chilli powder(optional)
  • Salt(according to taste)

Process:
  • Wash and cut eggplant as shown in the picture


  • Add salt 1 tbsp (according to taste), turmeric , and red chilli powder.




  • Marinate it and keep it aside for 5 to 10 min



  • Heat the pan and put oil 



  • Put cut eggplant in the pan and shallow fry from bottom side. Make sure the oil is hot before you add eggplant


  • Flip it after 5 min and shallow fry it from other side as well.



  • It's done and take it out and put over a tissue so it will soak the extra oil
